Interview with author Caldwell Esselstyn, MD,about Heart Disease and Plant Based Diets

Coronary artery disease, the world’s number one cause of death, can be prevented or reversed with a plant based diet. That was the conclusion of Dr. Caldwell Esselstyn in an interview on the Sharon Kleyne Hour, April 9, 2012. Esselstyn is author of Prevent and Reverse Hearth Disease (Avery Trade, 2008).

In 1984, Dr. Esselstyn began a study of 24 patients with advanced coronary artery disease. Patients were placed on a strict plant based diet and monitored for 20 years. Not one person who followed the diet experienced a cardiac event. Angiograms revealed an almost complete reversal of coronary artery plaque buildup.

Esselstyn’s heart health diet avoids the following foods: (1) Red meat. (2) Poultry. (3) Fish. (4) Dairy products (any product containing “caseinate”). (5) Eggs and egg substitute. (6) All oils, including olive and canola oil. (7) Fruit juice. (8) Nuts. (9) Avocados. (10) Coconuts. Eat only whole grains, with no refined flour or white rice. Soy products should not be overly processed or heavy in oil and salt. Good heart health foods include virtually all fruits and vegetables, whole grains and tubers (potatoes).

Sharon Kleyne on the US Government Cutoff of Tombstone, Arizona Drinking Water

Should there Be Emergency Exceptions to Wilderness Act Restrictions?

In winter of 2011-2012, according to Bob Beauprez, former US Congressman from Arizona, heavy storms hit Southern Arizona’s Miller Peak Wilderness, causing massive slides that damaged or buried a long-established water source (since 1884) for the city of Tombstone, 26 miles away. Beauprez was interviewed about the situation on the Sharon Kleyne Hour radio show, May 15, 2012.

A large segment of the city’s spring-fed water supply lay inside the Miller Peak Wilderness. The city’s request for a permit to repair the system was denied because mechanized equipment is not permitted inside a Federal Wilderness Area.

Tombstone, a city of 1,400, was granted heavy equipment permits to repair the pumping station and two feeder pipelines just outside the Wilderness. Permits were also granted to repair 23 feeder pipes inside the Wilderness, but only with hand tools and pack animals.

The city eventually sued the Federal Government. In June, 2012, the court ruled in favor of the Federal Government, arguing that although the city’s water rights predate both the National Forest and Wilderness Area, Wilderness restrictions are well established and the Forest Service has the authority to regulate activity on their land. The court further ruled that the situation does not warrant an exception because Miller Peak is not the city’s only water source. The other sources, plus water from the two repaired pipelines, should be sufficient to meet the city’s needs.

The city is appealing.

Sharon Kleyne Hour Guest Touts Organic Dry Land Farming as Draught Solution

Lower annual rainfall amounts and the depletion of ancient underground aquifers as a result of excessive crop irrigation are facts of life for farmers in many drought states of the American Western and Midwest (and more recently, the South). One promising solution is “organic dry land farming.” That was the conclusion of Fred Kirschenmann, PhD, in an interview on the Sharon Kleyne Hour Power of Water, talk radio show of October 8, 2012.

A Professor of Agriculture at Iowa State University, Dr. Kirschenmann also operates a large family farm in North Dakota, dedicated to entirely to dry land wheat farming. According to Kirschenmann, 70% of water in the United States is used for agriculture. Even where water is plentiful, good soil moisture retention, and good microbial soil health, will greatly benefit crop production and quality.

The key to water retention is the soil’s organic content (i.e., microbes and plant and animal waste). Soil with 1% organic material holds 33 pounds of fresh water per cubic yard while soil with 5% organic material holds 195 pounds. On average, agricultural soil in the US contains 2.2% organic material. With good farming methods this could be pushed to 6.5%.

According to Dr. Esselstyn, for optimum heart health, the following foods should be avoided: (1) Red meat. (2) Chicken and poultry. (3) Fish. (4) Dairy products. (5) Eggs and egg whites. (6) Oil, including olive and canola oil. (7) Refined flour and white rice. (8) Fruit juice. (9) Nuts. (10) Avocados. (11) Coconuts. (12) Soy products that are highly processed and heavy in oil and salt (Light tofu is fine, soy cheese is not).

Things that are good to eat include virtually all fruits and vegetables, legumes (peas and beans), whole grains and tubers (potatoes).

Sharon Kleyne Hour on Educating Children and Schools about Food

Interview with Tracy Hardy of the Rogue Valley Farm to Schools Program

Childhood obesity is a national health crisis and awareness of food choices other than fast foods and sugar drinks, are crucial to fighting the problem. That was the conclusion of Tracy Hardy of the Rogue Valley Farm to School Program, in an interview of the Sharon Kleyne Hour Power of Water on April 30, 2012. Her program sponsors summer camps and school field trips to local farms. It is attempting to enlist a participating farm in each Rogue Valley community.

Hardy also expressed concern to Sharon Kleyne about the importance of making sure children know where their food originates when purchased in stores. She and Sharon Kleyne believe in the importance of consuming locally grown food because they are better adapted to the nutritional needs of local residents (and require less fuel to ship).

Rogue Valley Farm to School is a leader in encouraging school districts to purchase more locally grown foods directly from the farms for their school lunches.

Sharon Kleyne reminded listeners that, “What you put in your mouth determines your health. Natural, healthy foods are not expensive and fresh, local, in-season vegetable produce costs less than prepared or imported foods.

As the first step towards good nutrition, Sharon Kleyne urges everyone to drink eight to ten glasses of pure water each day.

Interview with Best Selling Author Steven Solomon

“The global scarcity of fresh water in 2012,” says author Steven Solomon, speaking on the Sharon Kleyne Hour Power of Water syndicated radio talk show on April 23, 2012, “remains the world’s most explosive humanitarian and political crisis, affecting the health, security and livelihood of billions. The United States is not exempt.”

Sharon Kleyne observed that the global water crisis tends not to be of immediate concern in much of the developed world – despite the fact that in China’s numerous mega-cities, and in rapidly growing population centers in the American Southwest, fresh water disaster is immanent.

Solomon observed that the recent “Arab Spring” revolts began in response to spiking food prices caused by fresh water scarcity. According to Solomon, population growth worldwide is outstripping agricultural production and the limiting factor is fresh water.
